AS A child of the 1940s, brought up on a diet of tripe and onions, pigs’ feet and lard butties, it warms the cockles of my heart to see, in times of austerity and the credit crunch, a resurrection of traditional, cheaper cuts of meat that steadfastly served an older generation (Mail).
It’s so reassuring to see a revival of the Barnsley chop, ox tails and pigs’ trotters adorning the cold counters of our supermarkets.
Of course, celebrity chefs have been promoting old-fashioned dishes as part of their ‘celebrity chic’ drive to attract patrons to their restaurants.
But to an older generation, these now-trendy dishes were the lifeblood of our existence. It was Mother’s cooking wizardry that turned tripe and onions, and ox tails, into such mouthwatering dishes that many would rush home from school and work for. Moreover, we have to thank a woman of remarkable culinary talents who helped lay our modern-day tables with the old-fashioned recipes that attract us today.
Isabella Beeton, with her revised edition of The Book Of Household Management in 1888, was at the cutting-edge of recipes that are now becoming popular.
The nose-to-tail philosophy of using all parts of an animal advocated by modern chefs was common usage in her day. But what has changed, unfortunately, is the price of the ingredients.
In 1888, Mrs Beeton recommends a dish of dressed tripe with onion sauce at 7d, stewed cow heels at 6d each, fried lamb’s kidneys at 3d each and an Easter shoulder of mutton at 9d.
How reassuring to see the resurrection of these old recipes, but how about reviving Mrs Beeton’s prices?

Studies show that a significant percentage of adolescents from 13 to 19 years old are engaging in behavior that endangers their physical and social health, well-being, and their ability to establish a career goal, which is one of the most important decisions made during adolescence (1). Possessing a career goal serves as a protective factor for adolescents, who are then able to form positive self images, a future-oriented component based on what they know about their competencies, and the ability to follow school normative-prescribed behaviors such as better school attendance and school attachment (2).
It is estimated that one third of all adolescents have engaged in risk-taking behaviors at least once during their adolescence (3-6). Although adolescents are generally a high-risk group, youth living in poor inner city neighborhoods may be especially vulnerable to negative outcomes. Studies have documented that inner city youth experience high levels of stress, poverty, and exposure to violence, all behavioral and emotional factors related to educational attainment and dropping out from school (6-10).

IT’S THE TIME of year again for my annual holiday pet hazard column.
Between Thanksgiving, the December holidays and wintertime, we veterinarians see a large number of preventable emergencies. I thought I would review some of the most common dangers and clear up a few misconceptions.
By far the most common hazards for dogs are human foods. Almost every dog owner knows that chocolate is toxic to dogs, but it’s the concentration of cacao which determines how toxic it is.
One chocolate chip cookie will probably not hurt your Labrador, but a box of dark chocolates may. Milk chocolate has the least amount of cacao in it, followed by dark chocolate, and then baking chocolate.

Clinical signs of chocolate toxicity include agitation, vomiting, diarrhea, drooling, an elevated heart rate, tremors and seizures. If your dog ingests a large amount of cacao, and is not treated, he or she could become very ill and even die.
And don’t forget that dogs will find the chocolates wrapped up under the tree.
Fatty foods like ham and other meats, and desserts also pose a hazard as ingestion may result in pancreatitis, especially if your dog has experienced the illness in the past, or are one of the breeds that are predisposed. A severe bout of pancreatitis can land your dog in the hospital for several days, and in rare cases, can result in death.
Also, don’t allow your dog to chew on the bones leftover from cooked meats as these bones can splinter or get stuck in the stomach or intestine.
Plants are a common source of toxicity, and fortunately for pets, they usually do not result in death. Mistletoe can be toxic in large quantities but most dogs will only get a sprig or two, and will be fine.
Contrary to popular belief, Poinsettias are not toxic to dogs or cats and can only cause mild stomach and intestinal irritation.
Christmas tree water is generally thought to be safe to drink from, unless you use a fertilizer meant to extend the life of the tree. Fertilizers can contain nitrates which may be harmful to cats.
Rarely, the water can become contaminated with bacteria or fungus and can cause intestinal upset.
Do not allow your cat to chew on or ingest gift wrap ribbon, as it can easily cause an obstruction in the intestine requiring surgery. And although it’s not very rachael ray cookware common anymore, tinsel can do the same thing.
As for wintertime hazards, ethylene glycol, the main component of antifreeze, is very toxic to both dogs and cats. It has a sweet taste so it’s tempting to both species.
Signs include severe depression, vomiting, and kidney failure, within hours of ingestion, so it’s important to take your pet to the vet immediately if you suspect that he or she has ingested antifreeze.
Leaky radiators are the most common source of antifreeze, so ensure that any leaks or spills are cleaned immediately.

A SCHOOLBOY who nearly died after 12,000 volts shot through his body had surgery to save his right arm last night.
Brave Alex O’Brien will have his hand amputated next week after the horrific accident with electric cables attached to a pylon near his home.
The 11-year-old was playing in a field on Sunday evening with his friend, 10-year-old Robert Hawe, who was riding a dirt bike.
Alex, from Bagenalstown in Carlow, tripped over a live cable from the pylon and when he put out his hands to break his fall he was hit by powerful bolts of electricity.
His devastated mother Imelda said: “We’re in shock. His hand has been completely burned through. It’s like it has melted. He’s black and blue all down his right side, his back, his legs, chest, head.
“There are wounds all over him. The surgeons said that to even try and save what’s left of the hand he would have to go through operation after operation and skin graft after skin graft.
“When he amputates the hand he’s going to keep it as close as possible to the wrist but it will be above.
“I’m not angry at anybody. I’m angry at the situation and what my boy is having to go through.” Alex’s grandmother Kathleen added her lively, active grandson will struggle to come to terms with the loss of his hand.
She said: “At first we didn’t know what happened. Alex told us he tripped over some wire and he caught a wire that was hanging out.”
Surgeons told the family Alex had been seconds away from death.
Kathleen thanked Robert and his father for their quick thinking.
Robert covered Alex with his coat after the accident and electric cycle ran to his father for help, who managed to remove Alex’s hand from the live wire. Kathleen added: “He was into hurling and martial arts and other things.
“He joined the Rathanna Pipe Band two or three weeks ago and was delighted with the drums.
“He was showing me the other night how to hold the sticks and play.”
She added electricity blackouts are common in the town during Halloween because vandals throw objects at the pylons.
Local Fine Gael councillor Breda Byrne added: “There are frequent blackouts, especially in the winter.
